Nothing all that newsworthy or inspiring here today…I spent most of my morning discussing the ins and outs of poop with my four year olds. Actually an interesting conversation- I felt like a real teacher, using a “teachable moment.” From the initial question, “Why did my dog poop in the yard?” we ended up covering all kinds of topics, from digestion, nutrient rich food, to stranger danger and who is allowed to touch ‘privates’ and who is not. All from dog poop.
Instead of spending the whole post on that subject, however, I thought I’d share with you all one of my very favorite meals/snacks/goodies…whatever you want to call it. I just ate one. You have to try one.
Toast, ghee, almond butter, honey, and banana sandwiches. So simple, yet so elegant. The combination of flavors works even on gluten free rice bread. Now, that’s saying something.
First make sure your toast is nice and crunchy. Retrieve it immediately from the toaster to spread the ghee (clarified butter) over one side of toast. Add the almond butter (not peanut butter- this is the key) to the other side. Cut up a banana and stick it on either. Sprinkle just a dab of honey over the banana and put it all together. Be careful that the honey doesn’t drip all over. Once it starts, it is tough to get under control, and it can ruin the sandwich eating experience. Unless you have a small dog to lick it up immediately.
The gentle and satisfying flavors can be used as breakfast, lunch, a snack, or even a small dinner if your spouse is out of town. mmmmmm I could eat them all day long.
This sandwich is the reason I needed to replace my broken toaster immediately. It’s delectable. Enjoy.
By the way, that old toaster I spoke about before- I took it into school for the kids to play with (don’t worry, I unhooked the wires) and saw, for the first time, even though it had sat in my kitchen for FOUR years, there was a specific setting on it for…Pop tarts.
Does anyone eat pop tarts anymore? Apparently enough people to warrant a special setting on a Target $9.99 special.
